milk & honey cupcakes with honey cream cheese frosting & mini teddy grahams crackers 🍯🧸☁️

makes about 12 cupcakes


ingredients

  • buttermilk honey cupcakes (adapted from milk & honey cake by odette williams)

    • 1 cup + 2 tbsps all-purpose flour

    • 1 tsp baking powder

    • ¼ tsp baking soda

    • a pinch of kosher salt

    • ½ cup buttermilk

    • 6 tbsps honey

    • ¼ tsp vanilla extract

    • 6 tbsps unsalted butter

    • 1/3 cup granulated sugar

    • 1 ½ eggs, whisked

  • honey cream cheese frosting

    • 8 oz (1 block) cream cheese, room temperature

    • 1/2 cup (1 stick) unsalted butter, room temperature

    • 1 tsp vanilla extract

    • 2 tbsps honey

    • pinch of salt

    • 2 1/2 cups powdered sugar

  • mini teddy graham crackers

  • extra honey, for drizzle

  • medium mixing bowl

  • stand mixer bowl or large mixing bowl

  • stand mixer with paddle attachment or hand mixer

  • 1 or 2 mini loaf pan(s), greased with butter & lined with parchment paper

  • wire rack with baking sheet

  • medium mixing bowl

  • whisk



steps

  1. make the buttermilk honey cupcakes: preheat oven to 350f. in a medium mixing bowl, whisk together all dry ingredients: 1 cup + 2 tbsps all-purpose flour, 1 tsp baking powder, ¼ tsp baking soda, & a pinch of kosher salt. set aside

  2. in a glass measuring cup, whisk together wet ingredients: ½ cup buttermilk, 6 tbsps honey, & ¼ tsp vanilla extract. set aside

  3. in a stand mixer bowl with paddle attachment or a large mixing bowl with a hand mixer, beat together 6 tbsps unsalted butter & 1/3 cup granulated sugar on medium-high speed until light and fluffy, about 5 minutes

  4. add in 1 ½ eggs. beat to mix well, about 3 minutes

  5. sift in half the dry ingredients, mix. add in all the wet ingredients, mix. sift in the remaining dry ingredients, mix until batter comes together

  6. evenly divide batter into each cupcake liner, fill about ¾ the way

  7. bake at 350f for about 20 minutes until cupcakes are puffed up & golden brown

  8. let cupcakes cool in muffin tin for 10 minutes before transferring to wire rack to cool completely

  9. make the honey cream cheese frosting: in a stand mixer bowl with paddle attachment or medium mixing bowl with hand mixer, beat 8oz cream cheese, 1/2 cup unsalted butter, 1 tsp vanilla extract, 2 tbsps honey, & a pinch of salt until fluffy, about 2 minutes. add in 2 1/2 cups powdered sugar, mix on low speed until combined. chill until cupcakes cool completely

  10. assemble the milk & honey cupcakes: top each cupcake with a generous scoop of cream cheese frosting. top with mini teddy graham crackers. drizzle some extra honey on cupcakes
