lemon butter cake.
a very classic lemon butter cake / pound cake with lemon icing 🍋
1 or 2 small mini lemon butter cake loaves
ingredients
lemon butter cake batter
1/2 cup + 2 tbsps granulated sugar
1 tbsp lemon zest
1/2 cup unsalted butter, room temperature
2 large eggs, room temperature
1/2 tsp vanilla extract
1 tbsp whole milk
3/4 cup + 3 tbsps all-purpose flour
1/2 tsp baking powder
1/4 tsp kosher salt (diamond crystal baking salt)
lemon icing
3/4 cup powdered sugar
2 tbsps lemon juice
1/2 tbsp unsalted butter, melted
extra lemon slices, for garnish
tools
medium mixing bowl
stand mixer bowl or large mixing bowl
stand mixer with paddle attachment or hand mixer
1 or 2 mini loaf pan(s), greased with butter & lined with parchment paper
wire rack with baking sheet

steps
make the lemon butter cake batter: preheat oven to 350f. in a medium mixing bowl, combine 1/2 cup + 2 tbsps sugar & 1 tbsp lemon zest. rub the sugar and zest together with your fingers until sugar is very fragrant
in a stand mixer bowl, combine about 1/2 cup butter & lemon sugar (from step 1) and beat with paddle attachment until very light and creamy, about 8 minutes. make sure to scrape down the bowl half way through
add 1 egg & 1/2 tsp vanilla extract, beat until well incorporated. add in remaining 1 egg and beat until until well incorporated. add in 1 tbsp whole milk and mix well
sift in 3/4 cup + 3 tbsps flour, 1/2 tsp baking powder, & 1/4 tsp kosher salt. gently mix until everything comes together
evenly pour batter into 1 or 2 mini loaf pan (1 for taller lemon butter cake loaf, 2 for smaller loaves)
bake for about 30 minutes until golden brown. tooth pick should come out clean
let lemon butter cake(s) cool in mini loaf pan for 10 minutes before removing and letting them completely on a wire rack with a baking sheet on the bottom
make the lemon icing: in a medium bowl, combine 3/4 cup powdered sugar, 2 tbsps lemon juice, 1/2 tbsp melted butter, and whisk until smooth
slowly pour generous amount of lemon icing over lemon butter cake(s). let it set for about 30 minutes before slicing with a serrated knife. feel free to garnish with some lemon slices
