easy brown butter pumpkin bread.
the easiest brown butter pumpkin bread with buttermilk glaze 🤎 these were made into snoopy themed mini cakes for extra fun
makes 1 loaf or 8 mini pumpkin bread cakelets
ingredients
pumpkin bread mix
your favorite pumpkin mix - i used trader joe’s pumpkin bread mix + additional ingredients needed (on back of box) - i used 1 large egg, 1/4 cup water, & 1/3 cup butter
buttermilk icing
1 cup powdered sugar
a couple tbsps of buttermilk
tools
small pot
spatula or whisk
large mixing bowl
snoopy cakelet pan, greased
wire rack
small mixing bowl
large baking sheet
steps
make the brown butter: in a small pot, add in 1/3 cup unsalted butter and place on medium heat to make brown butter. constantly stir until butter is foamy and brown, about 8 minutes. it should smell like butterscotch. set aside and let cool for about 5 minutes
preheat oven to 375f
make the brown butter pumpkin bread batter: in a large mixing bowl, combine 1 large egg, 1/4 cup water, & brown butter - whisk until well combined. add in pumpkin bread mix, stir well until just combined
pour brown batter pumpkin bread batter into greased cakelet pan
bake the brown butter pumpkin bread: bake for about 20 minutes in the oven until puffed up and golden brown
let cakelet pan cool for a couple minutes on baking sheet. then gently flip over and release cakelets onto a wire rack to let cool completely
make the buttermilk icing: in a small mixing bowl, whisk together 1 cup powdered sugar & a couple tbsps of buttermilk. once brown butter pumpkin bread cakelets are cool, gently dip each cakelet into icing and let the excess drip off on a wire rack on top of a baking sheet. let icing set for 20 minutes before serving
