baking vanilla bean caneles as a beginner ! Here’s an easy recipe that worked for me 🤎

makes about 12 caneles


ingredients

  • 2 1/4 cups whole milk

  • 2 vanilla bean pods, scraped

  • 1 1/4 cups granulated sugar

  • 1 cup all-purpose flour

  • 1/4 cup unsalted butter, melted

  • 2 egg yolks

  • 2 eggs

  • medium pot

  • large mixing bowl

  • whisk

  • mesh sieve

  • large glass jug/measuring cup (1L capacity)

  • plastic wrap

  • canele tray, greased with cooking spray

  • pastry brush

  • wire rack



steps

day 1

  1. prepare the vanilla bean canele batter: in a medium pot, combine 2 1/4 cups whole milk & 2 vanilla bean pods, scraped vanilla beans & 2 whole pods, and heat on medium low heat, bring to a boil. cover and let milk infuse for 20 minutes

  2. in another large mixing bowl, whisk together 1 1/4 cups granulated sugar & 1 cup all-purpose flour. pour in melted 1/4 cup unsalted butter and whisk crumbly

  3. pour vanilla bean milk (remove vanilla pods but save them) into crumbly mixture and whisk gently

  4. add in 2 egg yolks & 2 eggs and whisk gently

  5. strain canele batter through mesh sieve into a large glass jug/measuring cup. add in the vanilla pods. cover with plastic wrap so that it touches the batter. chill for 24 hours

day 2

  1. take out canele batter a couple hours before baking to bring to room temperature. whisk thoroughly to combine vanilla bean

  2. once ready to bake, preheat oven to 250f with the canele tray. once heated, removed tray and grease with baking spray. set oven to 450f

  3. pour canele batter into greased canele tray. fill each canele mold about 80% full

  4. bake canele: bake for 15 minutes at 450f. lower oven to 350f and bake for another 45-55 minutes until caneles are deep brown

  5. immediately flip them onto wire rack and let cool for at least an hour so that their crust forms

  6. enjoy!



notes

  • you can replace the 2 vanilla bean pod with a heaping 1 tbsp of vanilla bean paste

  • caneles are best enjoyed the day of or the next day. on the next day, heat in oven at 350f for 5 minutes and let cool for 15 minutes
