recreated the snoopy steamed buns from universal studios japan - i made mine with a classic red bean paste 🤎

makes about 2 large snoopy steamed buns


ingredients

  • steamed bun dough (adapted from mommy oven’s recipe)

    • 1/3 cup whole milk

    • 1/2 tsp instant yeast

    • 1 tbsp granulated sugar

    • 3/4 cup cake flour

    • 1/3 cup bread flour

    • 1/2 tsp baking powder

    • 1/4 tsp kosher salt

    • 1/2 tbsp unsalted butter, room temperature

    • 2 tsps cocoa powder (+ 1-2 tsps water)

  • 1/4 cup red bean paste

steps

  1. make the steamed bun dough: heat 1/3 cup whole milk in a glass measuring cup for about 25 seconds in the microwave (milk should be around 110-115f, warm to touch). then add in 1/2 tsp instant yeast & 1 tbsp sugar, whisk until dissolved. let sit for 5 minutes until foamy

  2. combine all dry ingredients in stand mixer bowl: 3/4 cup cake flour, 1/3 cup bread flour, 1/2 tsp baking powder, & 1/4 tsp kosher salt. pour in yeast mixture from step 1 to dry ingredients. mix on low with dough hook until dough separates from the sides of the bowl. it should mainly be stuck on the hook and the bottom of the bowl (about 5 minutes)

  3. add in 1/2 tbsp butter, mix on low until all incorporated

  4. increase speed to medium-high and knead for about 2 minutes until dough comes together. dough should be somewhat smooth and tacky

  5. divide dough, set aside 200g. to the remaining dough (about 40g), add in 2 tsps cocoa powder or hojicha powder with 1-2 tsps water. mix well

  6. form each dough into smooth balls. place the 200g dough in a medium bowl & the brown dough in a small bowl. cover with plastic wrap or cloth and let double in size in room temperature for about 1 hour - this is the 1st proof

  7. prepare the red bean paste: divide red bean paste in 2x 2 tbsps (20g). roll them into round balls. place them on a small parchment paper lined baking sheet then freeze

  8. assemble the snoopy steamed buns: gently punch down doughs to deflate and remove excess air. divide 200g white dough: 2× 50g & 2× 30g. roll into a smooth ball. cover with cloth and let sit for 15 minutes

  9. after 15 minutes, roll out the 50g piece ball with a rolling pin. place a red bean paste ball in the middle and wrap with dough. shape into a smooth ball. repeat

  10. gather 1 50g dough ball with red bean paste inside and 1 30g round ball. on a piece of parchment paper, stick them together to form snoopy head. with the brown dough, cut out some snoopy ears, eyes, & nose and place onto the white dough. repeat (see photos below)

  11. cover assembled snoopy buns and let proof for 30 minutes - this is the 2nd proof

  12. steam the snoopy steamed buns: bring steamer to a boil and reduce to medium heat. gently place snoopy buns in the steamer and steam for 15 minutes. after 15 minutes, turn off heat and let sit for 5 minutes without opening the lid

  13. enjoy!
