valentine’s day s’mores skillet cookie 💗 strawberry white chocolate s’mores cookie topped with cinnamon graham cookies, white chocolate chips, & strawberry heart marshmallows baked in a skillet topped with vanilla bean ice cream

makes 1 8” skillet cookie

ingredients

  • cookie dough

    • 6 tbsps unsalted butter, room temperature

    • 1/3 cup light brown sugar

    • 1/4 cup granulated sugar

    • 1 large egg, room temperature

    • 1 tsp vanilla extract

    • 1 cup all-purpose flour

    • 1/2 tsp baking soda

    • 1/2 tsp kosher salt

    • about 1/2 cup white chocolate chips, divided

    • about 1/2 cup crushed graham crackers

    • about 1/4 cup of strawberry heart marshmallows

  • toppings

    • strawberry heart marshmallows

    • vanilla bean ice cream

tools

  • medium pot

  • large mixing bowl

  • whisk

  • mesh sieve

  • spatula

  • heart skillet or any skillet/baking dish, sprayed with non-stick cooking spray

  • baking sheet

  • ice cream scoop/spoon

steps

  1. make the cookie dough: preheat oven to 350f

  2. in a large mixing bowl, combine 6 tbsps unsalted butter, 1/3 cup light brown sugar, & 1/4 cup granulated sugar, whisk until smooth

  3. add in 1 large egg and 1/2 tsp vanilla extract, whisk until combined

  4. sift in dry ingredients - 1 cup all-purpose flour, 1/2 tsp baking soda, 1/2 tsp kosher salt. gently mix with a spatula

  5. add in about 3/4 of 1/2 cup white chocolate chips, about 1/2 cup crushed graham crackers, about 1/4 cup of strawberry heart marshmallows into cookie dough and gently mix until incorporated

  6. fill cookie dough in a greased heart skillet - about 2/3 full. top with remaining 1/4 of white chocolate chips

  7. place skillet on top of a baking sheet and bake for about 15-20 minutes, until puffed and the surface is dry to the touch but still soft & gooey in the center

  8. let skillet cookie cool slightly before serving

  9. add your toppings: top s’mores skillet cookie with some strawberry heart marshmallows and a couple scoops of vanilla bean ice cream

  10. enjoy!
