steps

  1. combine the dry ingredients: in a medium mixing bowl, combine 2 1/2 cups (250g) cake flour, 1 1/2 tsps baking powder, & 1 tsp kosher salt, set aside

  2. make the old fashioned donut dough: combine 1/2 cup (100g) granulated sugar & 2 tbsps (28g) unsalted butter in a large mixing bowl. beat with hand mixer until light and creamy, about 2 minutes. add in 2 egg yolks and beat until well combined, about 2 minutes

  3. sift in half dry ingredients from step 1 and mix until just combined. add in 2/3 cup (160g) sour cream and mix until just combined. sift in the remaining half dry ingredients and mix until combined

  4. transfer old fashioned donut dough to lightly greased medium mixing bowl. cover and let chill for at least a couple hours

  5. shape the old fashioned donut dough: once chilled, place old fashioned donut dough on a piece of parchment paper dusted with cake flour. place another piece of parchment paper over dough. gently roll out dough to about 1/2” thick

  6. gently remove parchment paper on top, and using a large circle cookie cutter, cut out as many circles as you. cut out donut holes using a small circle cookie cutter. place cut out donuts and donut holes on dusted parchment paper on a baking sheet. you will have to combine scraps and cut out more circles - i was able to make 6 donuts and 6 donut holes

  7. make the salty vanilla glaze: in a medium mixing bowl, whisk together 1 cup (120g) powdered sugar, 1 tbsp (14g) melted salted butter, about 2 1/2 tbsps milk, & 1/4 tsp vanilla extract. set aside

  8. fry the old fashioned donuts: heat a generous amount of oil in a large/medium pot to 325f. fry donuts on each side for about 3 minutes until each side is golden brown

  9. place donuts on a wire rack and let cool for 5 minutes. then dip warm donuts in salty vanilla glaze and place on wire rack to set

  10. enjoy!
