a fudgy but light matcha white chocolate cake, inspired by a matcha gateau au chocolat (말차 갸또 쇼콜라) i had in seoul, korea many years ago 🍵
makes a 6” matcha gateau au chocolat
ingredients
matcha gateau au chocolat batter
3.5 oz (100g) white chocolate, chopped
7 tbsps (98g) unsalted butter
2 large eggs, separated and at room temperature
1/2 cup granulated sugar (100g), divided 1/4 cup (50g) + 1/4 cup (50g)
1 tbsp matcha powder
6 tbsps (45g) cake flour
pinch of kosher salt
5 tbsps (70g) heavy cream

powdered sugar
whipped cream
1/2 cup (120g) heavy cream
1 tsp (3g) powdered sugar
fresh strawberries (optional)

6” cake pan, greased and lined with parchment paper
large heatproof bowl + medium pot (double boiler)

2 large mixing bowls

steps
preheat oven to 350f
make the matcha gateau au cake batter: in a double boiler, melt together chopped white chocolate & unsalted butter - stir to combine
in a large mixing bowl, whisk together egg yolks with 1/4 cup (50g) sugar until well mixed. add a pinch of kosher salt. then whisk in matcha white chocolate mixture from step 1. sift in dry ingredients: matcha powder, cake flour, & pinch of kosher salt, whisk until combined. then add in heavy cream and whisk well. set aside
in another large mixing bowl, beat egg whites the remaining 1/4 cup (50g) using a hand mixer until soft peaks (do not beat until stiff)
add about a 1/4 of beaten egg whites into matcha white chocolate mixture and whisk until smooth. then add in rest of beaten egg whites and gently fold with a spatula to combine. do not overmix to deflate cake batter
pour cake batter into prepared cake pan and bake for about 30-35 minutes until cake is puffed & top is cracked
let cake completely cool in the pan on a wire rack. cake will sink as it cools. after it is completely cool, you can store in the refrigerator until you serve
decorate the matcha gateau au chocolat: once ready to serve, dust with a generous amount powdered sugar. slice and top with a whipped cream & fresh strawberries (optional)
