it’s hot chocolate season 🤎 my perfect hot chocolate recipe with homemade vanilla bean marshmallows
makes about 4 jumbo / 8 large vanilla bean marshmallows
ingredients
vanilla bean marshmallows
1/4 cup (32g) corn starch
1/4 cup (32g) powdered sugar, plus extra for dusting
1/2 cup cold water, divided
1 packet (1/4 oz) of unflavored gelatin
3/4 cup (150g) granulated sugar
1/2 cup (120ml) light corn syrup
1 tsp vanilla bean paste
hot chocolate
100g whole milk
20g heavy cream
1 1/2 tbsp hot chocolate mix
2 tsps cane sugar (optional if your hot chocolate mix is already sweetened)
about 1/2 tsp vanilla bean paste
tools
medium bowl
whisk
small baking dish, greased and dusted with corn starch + powdered sugar
non-stick cooking spray
mesh sieve
stand mixer with whisk attachment
medium pot
kitchen thermometer
silicone spatula
kitchen knife, greased
small pot or milk frother
mug
steps
vanilla bean marshmallows:
prepare the baking dish: combine equal parts corn starch and powdered sugar, about 1/4 cup each. thoroughly spray baking dish with non-stick cooking spray and generously dust corn starch + powdered sugar mixture with a mesh sieve. tap out any excess corn starch + powdered sugar mixture
bloom the gelatin: in a stand mixer bowl, pour in 1/4 cup water and sprinkle in 1 packet (1/4 oz) of unflavored gelatin. let it sit and bloom for about 10 minutes
make the corn syrup mixture: in a medium pot, combine the remaining 1/4 cup water, 3/4 cup (150g) granulated sugar, & 1/2 cup (120ml) light corn syrup. place on medium heat and bring to boil, about 240f
whip the marshmallow: Turn on the stand mixer on low and slowly pour corn syrup mixture into the stand mixer bowl. increase speed to medium high and whip for about 5 minutes until mixture doubles in size. decrease speed to low and add in 1 tsp vanilla bean paste
pour marshmallow in baking dish: immediately pour marshmallow into baking dish. tap baking sheet to get rid of any air bubbles
let marshmallow sit: place uncovered baking sheet in a cool area and let marshmallows set for at least 4 hours. you can also place it in the refrigerator overnight
cut the marshmallows: once ready, using a mesh sieve, generously dust vanilla bean marshmallow surface with more powdered sugar. gently remove vanilla bean marshmallow from mold. place on a dusted cutting board and using a greased kitchen knife, cut into 4 jumbo or 8 large marshmallows. dust marshmallow sides with extra powdered sugar
store in an airtight container until ready to enjoy with hot chocolate
hot chocolate:
make the hot chocolate: in a small pot or milk frother, combine 100g whole milk, 20g heavy cream, 1 1/2 tbsp hot chocolate mix, 2 tsps cane sugar (optional if your hot chocolate mix is already sweetened), & about 1/2 tsp vanilla bean paste. if using small pot, place on medium low heat and whisk until everything is combined and warm. if using milk frother, turn on milk frother according to machine settings
pour into a mug and top with a vanilla bean marshmallow

this process is very fast paced. make sure you read the recipe and have everything prepared ahead of time
you can use a high speed hand mixer instead of a stand mixer. make sure your bowl is in place by placing it on a mat or kitchen towel
