the classic vanilla ice cream sandwich in a heart shape 🖤

makes about 3 heart ice cream sandwiches



ingredients

  • heart chocolate cookies

    • 1/2 cup (about 75g) all-purpose flour

    • 1 tbsp (10g) dutch cocoa powder

    • 1 tbsp (10g) black cocoa powder

    • 1/4 tsp baking soda

    • 1/4 tsp kosher salt

    • 3 tbsps (43g) unsalted butter, room temperature

    • 1/4 cup (50g) granulated sugar

    • 2 tbsps (25g) light brown sugar

    • 1/2 tsp vanilla extract

    • 1/3 cup (76g) whole milk

  • 1 pint vanilla ice cream or homemade vanilla ice cream

steps

  1. make the chocolate cookie dough: preheat oven to 350f. in a medium bowl, whisk together 1/2 cup (about 75g) all-purpose flour, 2 tbsps (20g) dutch cocoa powder, 2 tbsps (20g) black cocoa powder, 1/4 tsp baking soda, & 1/4 tsp kosher salt

  2. in a separate mixing bowl, combine 3 tbsps (43g) unsalted butter, 1/4 cup (50g) granulated sugar, 2 tbsps (25g) light brown sugar, & 1/2 tsp vanilla extract. beat until creamy, about 2 minutes

  3. sift in 1/2 dry ingredients from step 1, beat until just combined. add in 1/3 cup (76g) whole milk and beat until just combined. sift in remaining 1/2 dry ingredients, beat until just combined

  4. evenly spread chocolate cookie dough onto a greased parchment paper on a quarter baking sheet. tap baking sheet a couple times on counter to remove any air bubbles

  5. bake the chocolate cookie: bake for about 10 minutes until chocolate cookie surface is no longer shiny

  6. let chocolate cookie sit on baking sheet on a baking sheet, let cool completely

  7. once you’re ready to proceed, place baking sheet in the freezer for about 10 minutes

  8. assemble heart ice cream sandwiches: take out baking sheet from freezer and remove parchment paper with chocolate cookie from baking sheet and place on counter. using a heart ice cream sandwich cutter, cut out as many hearts as you can - make sure they have a pair tho. place all cut out hearts on baking sheet lined with parchment paper and freeze for another 30 minutes

  9. once frozen, place a heart on the bottom of ice cream sandwich cutter mold. add a heaping scoop of vanilla ice cream, add another heart on top and press. transfer heart ice cream sandwich onto a piece of parchment and wrap. repeat for all remaining heart chocolate cookies

  10. freeze assembled heart chocolate cookies for a couple hours or overnight

  11. take heart ice cream sandwiches and let sit for 5 minutes before serving

  12. enjoy!



notes

  • the chocolate cookie recipe is adapted from king arthur baking’s Chocolate Ice Cream Sandwiches recipe - full recipe credits to king arthur baking

  • black cocoa is optional - replace black cocoa with the same amount of dutch cocoa powder (use 1/4 cup dutch cocoa powder in total)

  • with the remaining chocolate cookie scraps, cut them into smaller pieces as use them as an ice cream topping

  • the heart shape is optional ! in step #, instead of cutting out hearts chocolate cookies, cut the entire chocolate cookie in half - you should have 2 sheets of chocolate cookies. spread vanilla ice cream on one sheet of chocolate cookie and lay the other chocolate cookie on top. cover and freeze for a couple hours or overnight. once frozen, cut into smaller rectangles and serve
