guava linzer cookies.
classic linzer cookies with guava jam 🍓
makes about 15-20 guava linzer cookies
ingredients
linzer cookie dough
250g all-purpose flour
88g powdered sugar, plus extra for dusting
pinch of salt
1/2 tsp baking powder
100g unsalted butter, room temperature
1 egg yolk + 1/2 egg white (17g)
1/2 tsp vanilla extract
store bought guava jam
tools
stand mixer or hand mixer
rolling pin
linzer cookie cutter with heart (feel free to use any shape with a smaller cookie cutter)
baking sheet lined with parchment paper
wire rack
mesh sieve
teaspoon
butter knife
steps
make the linzer cookie dough: using stand mixer/hand mixer, combine 2 cups (250g) all-purpose flour, 88g powdered sugar, pinch of salt, 1/2 tsp baking powder, 100g unsalted butter, 1 egg yolk + 1/2 egg white (17g), & 1/2 tsp vanilla extract in a large bowl and mix on medium-low speed until a smooth dough forms - this may take some time but it will come together
wrap dough in plastic wrap and chill for at least 1 hour or overnight
bake the linzer cookies: once ready to bake, preheat oven to 340f
roll out chilled dough to about 1/8” thick and cut out an equal amount of linzer cookies. for half of the linzer cookies, cut out a smaller heart in the middle
evenly place linzer cookies on a lined baking sheet
bake in the oven for about 12 minutes until cookies are just golden
let cookies cool on baking sheet for 10 minutes before transferring them to a wire rack to cool completely
assemble the guava linzer cookies: lay all linzer cookies with heart cut outs on a baking sheet. using a mesh sieve, dust powdered sugar
place about 1 tsp of guava jam on linzer cookie & smooth with a butter knife. place another linzer cookie with heart cut out directly on top and gently press down

this recipe is adapted from the little jam flower cookies recipe in la vita e dolce
in step 1, you can make the dough without a stand or hand mixer - simply combine powdered sugar, pinch of salt, and unsalted butter with a spatula. then add in 1 egg yolk + 1/2 egg white (17g), & 1/2 tsp vanilla extract, mix well combined. add in 250g all-purpose flour & 1/2 tsp baking powder and mix until a smooth dough forms. continue with step 2
