easy earl grey sable cookies perfect for afternoon tea time 🫖

makes about two dozen earl grey sable cookies


ingredients

  • earl grey sable cookie dough

    • 3/4 cup + 1 tbsp all-purpose flour

    • 2 tbsps corn starch

    • 1/2 tsp kosher salt

    • 1/2 cup unsalted butter, room temperature

    • 2 tbsps milk powder

    • about 6 tbsps granulated sugar

    • 1 egg, separated egg yolk & egg white

    • 1 tsp vanilla bean paste / vanilla extract

    • 1 earl grey tea bag

  • demerara sugar



tools

  • 2 medium mixing bowls

  • silicone spatula or spoon

  • 2 sheets of parchment paper

  • tray

  • pastry brush

  • paring knife

  • baking sheet lined with parchment paper

  • wire rack



steps

  1. make the earl grey sable cookie dough: in a medium bowl, whisk together 3/4 cup + 1 tbsp all-purpose flour, 2 tbsps corn starch, & 1/2 tsp kosher salt

  2. in a medium mixing bowl, combine 1/2 cup unsalted butter, 2 tbsps milk powder, about 6 tbsps granulated sugar and cream with a silicone spatula or spoon until smooth, about 2 minutes

  3. add in 1 egg yolk and 1 tsp vanilla bean paste / vanilla extract, combine until smooth

  4. add 1 earl grey tea bag and dry ingredients from step 1 and mix until a smooth dough forms

  5. divide dough into 2 and place a dough onto a sheet of parchment paper and form dough in a thin log. wrap log with plastic wrap and chill for at least 2 hours or overnight. repeat with other dough

  6. bake earl grey sable cookies: once ready to bake, preheat oven to 350f

  7. lightly brush each logs with some egg white and roll it in demerara sugar. slice log into even 1/2” thick rounds

  8. evenly place earl grey sable cookies on a lined baking sheet

  9. bake in the oven for 12 minutes, until golden

  10. let earl grey sables cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely

  11. enjoy!
