makes about 6 large brown butter snickerdoodles
ingredients
brown butter snickerdoodle cookies
1/2 cup unsalted butter
1 cup granulated sugar
1 large egg, room temperature
2 tsps vanilla extract
1 1/2 cups all-purpose flour
1 tsp cream of tartar
1/2 tsp baking soda
1/4 tsp kosher salt
cinnamon sugar
1 tbsp granulated sugar
1/2 tsp cinnamon powder
optional: edible glitter stars

silicone spatula
large mixing bowl
hand mixer or whisk
mesh sieve
plastic wrap

steps
make the brown butter: in a small pot, add in 1/2 cup unsalted butter and place on medium heat to make brown butter. constantly stir until butter is foamy and brown, about 8 minutes. it should smell like butterscotch. set aside and let cool for about 5 minutes
make the brown butter snickerdoodle cookie dough: in a large mixing bowl, combine brown butter & 1 cup granulated sugar with a hand mixer or whisk until well combined
add in 1 large egg & 2 tsps vanilla extract, beat/whisk to combine
sift in 1 1/2 cups all-purpose flour, 1 tsp cream of tartar, 1/2 tsp baking soda, & 1/4 tsp kosher salt. stir with spatula to combine. cover and chill for 30 minutes
using a cookie scoop, portion out the dough and roll into about 6 balls. roll each dough ball in cinnamon sugar. evenly place dough balls on prepared baking sheet
bake the brown butter snickerdoodle cookies: preheat oven to 350f
bake for 13-15 minutes in the oven, cookies should be puffed up and set on the edges but center should still be soft. let cool slightly on the baking sheet, then transfer to a wire rack to cool completely
